Fennel oil isobtained by steam distillation of the dried fruits of Foeniculumvulgare. The oil is paleyellow to brownish-yellow in colour. It has a characteristic sweet, green,earthy, spicy note. Anethole and fenchone are major components in Fennel oil.The oil is mainly used in oral care formulations and flavouring applications,especially in beverages.
